Plant Based Breakfast Sausage

 

If you follow me on social media (InstagramTikTokYouTube), you know how much I enjoy my mushroom & walnut meat recipe. Well, I decided to turn that recipe into plant-based breakfast sausages. These sausages are delicious, healthy, and have a decent amount of protein. I like adding these to my breakfast sandwiches, but they’re also delicious on their own

Here’s everything you will need to make these breakfast patties, along with cooking notes:

SAUSAGE PATTY INGREDIENTS: 

  • Soaked walnuts: I recommend soaking the walnuts overnight in water. This will help to soften them. You can also use pecans if that is what you have on hand.

  • Baby Bella mushrooms: whole or sliced work well. If you can’t find baby bella mushrooms, portobello mushrooms well, too

  • Rolled oats

  • Diced yellow onion

  • Liquid smoke

  • Milled flaxseeds: If you only have whole flaxseeds, add them to a food processor or blender to create milled flaxseeds

  • Nutritional yeast

  • Pea protein crumbles: I enjoy using the pea protein crumbles - option 1, option 2. Or you can use textured vegetable protein. 

  • Garlic cloves

  • Tomato paste

  • Coconut aminos or soy sauce

  • Maple syrup or agave

SEASONING BLEND: 

  • Onion powder

  • Garlic powder

  • Cumin

  • Fennel seeds

  • Ground sage

  • Salt

  • Black pepper 

If there is an ingredient here that you’re not a fan of or cannot eat, feel free to leave it out and replace it with an item you prefer to use. 

STEP 1: Soak the walnuts overnight in water. Once ready to use, drain and rinse.

STEP 2: Preheat the oven to 350 degrees.

STEP 3: Combine the breakfast sausage seasonings and set aside.

STEP 4: Add prepared sausage ingredients, seasoning blend and remaining ingredients to a food processor or blender. If using a blender, pulse the mixture to ensure you do not over blend it. You may need to use a silicon spatula to push down the sides of the mix in the blender. 

STEP 5: Form the sausage mixture into patties and place on a greased baking sheet.

STEP 6: Bake in the oven for 25 minutes, flipping over halfway through.

STEP 7: Serve and Enjoy!


This recipe makes 10-12 patties, depending on how large or small you make them. They hold well in the freezer. To reheat them, add the to the microwave or air-fryer.

  • 1/2-3/4 cup walnuts, soaked overnight
  • 200 grams sliced baby Bella mushrooms (roughly 2 cups)
  • 1 cup rolled oats
  • 1/2 cup diced onions
  • 3 tbsp milled flaxseeds
  • 4 tbsp nutritional yeast
  • 1 1/2 cups rehydrated pea protein crumbles (or rehydrated textured vegetable protein)
  • 3-4 garlic cloves
  • 1 tbsp tomato paste
  • 1 tbsp coconut aminos
  • 1 tsp liquid smoke
  • 1 tbsp maple syrup

Seasoning Blend Ingredients:

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tbsp fennel seeds
  • 1 tbsp ground sage
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

Prepare Walnuts: Soak walnuts overnight in water. Once ready to use, drain and rinse.

Preheat Oven: Preheat the oven to 350 degrees.

Prepare Seasonings: In a small bowl, combine the onion powder, garlic powder, cumin, fennel seeds, ground sage, salt, and black pepper and set aside.

Blend Sausage Mixture: In a food processor or blender, add the soaked walnuts, mushrooms, rolled oats, diced onions, flaxseeds, nutritional yeast, rehydrated pea protein crumbles, garlic cloves, tomato paste, liquid smoke, coconut aminos, and seasoning blend, and maple syrup.

If using a blender, pulse the mixture to avoid over-blending.

Form Patties and Bake: Form the sausage mixture into 10-12 patties and place them on a greased baking sheet.

Bake in the preheated oven for 25 minutes, flipping the patties halfway through.
