Breakfast Sandwich with Tofu Eggs and Plant Based Sausage

 

This breakfast sandwich is one of my favorite meals to meal prep for breakfast! It is packed with protein (30 grams, depending on how much of each ingredient you use) and fantastic flavor! I hope you enjoy it as much as I do. 

Here’s everything you will need to make these protein-packed plant-based breakfast sandwiches with along with cooking notes:

BREAKFAST SANDWICH INGREDIENTS: 

  • Organic firm or extra-firm tofu

  • Breakfast sausage patties: you can use my recipe or purchase plant-based patties from the grocery store. If using my plant-based patty recipe, you must soak the walnuts overnight first. Though this will require additional work, it is so worth it! 

  • English muffin or biscuit: I used Dave’s Killer Bread English muffins

  • Vegan cheese, sliced: I used Vio Life sliced plant-based cheese but would also recommend dairy and chao creamy slices

  • Breakfast sandwich spread: I went with grape jam, but you can use your go-to breakfast sandwich spread.

TOFU “EGG” MARINADE INGREDIENTS: 

  • Nutritional yeast

  • Turmeric

  • Curry powder

  • Smoked paprika

  • Garlic powder

  • Onion powder

  • Black pepper

  • Kala Namak (Black Salt): this gives dishes an egg-like flavor. You can typically find this at a local International Market or Amazon

  • Water

If there is an ingredient here that you’re not a fan of or cannot eat, feel free to leave it out and replace it with an item you prefer to use.

STEP 1: Prepare “egg” marinade and marinate the tofu for a minimum of 1 hour

STEP 2: Cook Breakfast Sausage and tofu “egg” patties. Remember, if you plan to use my plant-based sausage recipe, you will need to soak the walnuts 24 hours before prepping.

STEP 3: Assemble Sandwiches and enjoy!

Ingredients:

Breakfast Sandwich Ingredients:

  • Breakfast sausage patties (you can find my recipe here)
  • Dairy-free English muffin or biscuit
  • Vegan cheese, sliced
  • Grape Jelly (or a spread of your choice)

Tofu Egg Patty Ingredients:

  • 4-5 slices of organic firm or extra-firm tofu
  • 1/4 cup nutritional yeast
  • 1/2 tsp turmeric
  • 1/2 tsp curry powder
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1 tsp Kala Namak (Black Salt)
  • 1 1/4 cup water

Instructions:

Prepare The Tofu Egg Marinade: In a large mixing bowl, combine nutritional yeast, turmeric, curry powder, smoked paprika, garlic powder, onion powder, black pepper, and Kala Namak (Black Salt).

Add water and whisk together to create the marinade.

Marinate Tofu: Slice firm or extra-firm tofu into 4-5 pieces and place them in a container where they can lay flat.

Pour the marinade over the tofu slices, cover with a lid, and refrigerate for at least 1 hour. For more flavor, leave the tofu in the refrigerator overnight.

Cook Breakfast Sausage: Cook the plant-based breakfast sausage according to the recipe or packaging directions. Set aside.

Cook Tofu: When ready to cook the tofu, add the sliced tofu to a large skillet along with some of the marinade.

Cook on each side for 3-4 minutes until the marinade has absorbed into the tofu.

Assemble Sandwiches: Assemble the breakfast sandwiches by adding a layer of your chosen spread (e.g., jam, plant-based butter, dairy-free cream cheese) to an English muffin or biscuit.

Add one of the tofu "egg" patties, a plant-based breakfast patty, and a slice of vegan cheese.

Serve warm and enjoy!
