Mesquite BBQ Pulled Mushroom Sandwich

There’s a misconception that vegans can’t have BBQ and another misconception that vegan food doesn’t have flavor. I’m here to tell you that both of those couldn’t be further from the truth! When I first went vegan, very rarely could I find vegan BBQ at restaurants. But, if you know me, I always say “I can make that at home” and that’s exactly what I did. 

Here’s my take on a vegan BBQ pulled mushroom sandwich using McCormick Grill Mates Mesquite Seasoning that I found in the spice aisle at Walmart. You can also purchase this seasoning through Walmart Online Grocery: https://bit.ly/WalmartGrillMates

My Fiancé and I are revamping our backyard and plan to do a ton of hosting this summer (if things calm down a bit). With that being said, it’s only right that I prove to our family and friends that 1. Vegan food is delicious and 2. It’s possible to have vegan BBQ. 

I made this delicious pull-mushroom sandwich using shredded king oyster mushrooms, McCormick Grill Mates Mesquite Seasoning, and BBQ sauce.

The ingredients are relatively simple:

  • King oyster mushrooms

  • McCormick Grill Mates Mesquite Seasoning

  • Olive oil

  • Hamburger buns

  • Dairy-free cheddar cheese slices

  • BBQ sauce

  • Toppings: lettuce or arugula, sliced onions, sliced tomatoes

I’ve tried several of the McCormick Grill Mates Seasonings and have even used them on portobello mushrooms, seitan steaks, and vegetable kabobs. My top two seasoning picks would have to be the Brown Sugar Bourbon and the Mesquite. 

If you’re unable to find the king oyster mushrooms, try using jackfruit (in brine) or regular oyster mushrooms. This sandwich is all about the seasoning and the BBQ sauce.

Ingredients:

  • 8 medium-sized king oyster mushrooms (I purchase mine at local Asian Markets)
  • 1 1/2 tbsps of McCormick Grill Mates Mesquite Seasoning
  • 2 tbsps olive oil
  • Hamburger buns
  • Dairy-free cheddar cheese slices
  • 1/2 cup of BBQ sauce (or more)
  • Toppings: lettuce or arugula, sliced onions, sliced tomatoes

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit
  2. Shred mushrooms using a fork and drizzle with olive oil. Generously season the mushrooms with McCormick Grill Mates Mesquite Seasoning
  3. Transfer mushrooms to a greased baking sheet and bake in the oven for 20-25 minutes.
  4. Remove from oven, add BBQ sauce to the mushrooms and assemble the sandwiches
