Dairy-free Apple and Raspberry Crumble

If you ask me what my go-to vegan/dairy-free desserts are, my fruit crumble is definitely Top 5!

It is one of the most simple yet delicious desserts, next to ice cream which may number #1 for me.

I’ve been making fruit crumble for a while now and it gets better and better each time. One of the reasons it is a go-to for me is because it can be so versatile when it comes to the fruits used. For this recipe, I used fresh apples and frozen raspberries but you could always try it with blueberries, peaches, blackberries, strawberries, apricots, etc.

Also, many of the ingredients are staples that you may already have at home. This recipe does call for dairy-free butter and can be found at many local grocery stores. I used Earth Balance but you could definitely give other brands a try.

In the event you do not have brown sugar on hand, white sugar should work just as well.

Ingredients:

Fruit Mix

  • 2 medium-large sized apples or fruit of your choice
  • 1 1/2 cup of frozen raspberries or fruit of your choice
  • 1 1/2 tbsps of corn starch
  • 1 tbsp of lemon juice
  • 1/2-3/4 cup of brown sugar

Crumble Mix

  • 1 cup of all purpose flour
  • 3/4 - 1 cup of rolled oats
  • 1 cup of brown sugar
  • 1/4 - 1/2 cup of softened dairy-free butter

Instructions:

  1. Preheat the oven to 375 degrees
  2. In a bowl, combine the fruit ingredients until the cornstarch is no longer visible and the sugar is evenly coated
  3. In a second bowl, combine the flour, oats and brown sugar. Next, add in the softened butter and mix until crumbled
  4. In a medium-sized baking dish or ramekins, add in the fruit mix and top it with the crumble mix
  5. Bake in the oven for 45 minutes
  6. Remove from oven, let cool and serve with your choice of dairy-free ice cream
