veganuary ep. 6: what I eat in a day

CARMALIZED PEARS & CHIA SEED PUDDING

2 SERVINGS

CHIA SEED PUDDING INGREDIENTS:

  • 2 tbsp chia seeds

  • 1 cup plant-based milk

  • 1-2 tbsp maple syrup or agave syrup (adjust to taste)

  • 1/2 tsp vanilla extract

DIRECTIONS: In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Whisk the ingredients together thoroughly. Let the mixture sit for about 5 minutes, then whisk again to avoid clumping. Cover and refrigerate for at least 1 hour, allowing the chia seeds to absorb the liquid and create a pudding-like consistency.

CARAMELIZED PEARS INGREDIENTS:

  • 1-2 ripe pears, cored and sliced

  • 1 tbsp vegan butter

  • 1 tbsp coconut sugar or your choice of sweetener

  • 1/4 tsp cinnamon

  • Pinch of salt

DIRECTIONS: In a skillet over medium heat, melt coconut oil or vegan butter. Add sliced pears to the skillet and sauté for 2-3 minutes until they start to soften. Add coconut sugar, cinnamon, and a pinch of salt. Stir well to coat the pears evenly.

Continue cooking for another 5 minutes, or until the pears are caramelized and golden brown. Remove from heat and let it cool slightly.

ASSEMBLY: Add the chilled chia seed pudding to a bowl and top with the caramelized pears.


PLANT-BASED GROUND “BEEF” TACOS

TACO INGREDIENTS:

Corn tortillas

Plant-based Ground “Beef” (or you can use my mushroom and walnut meat recipe)

1/4 cup diced yellow onions

Taco seasoning

Shredded lettuce

Red onions

Salsa

Guacamole

Vegan cheese

DIRECTIONS

Prepare the Plant-Based Ground "Beef": In a skillet over medium heat, add the diced yellow onions to the skillet and sauté until they are translucent and fragrant. Now add the plant-based ground "beef" and cook according to the package instructions. Sprinkle taco seasoning over the plant-based ground "beef" and onions. Stir well to ensure even coating. Adjust the seasoning to taste.

Warm the Corn Tortillas: Heat the corn tortillas in a dry skillet or microwave for about 20 seconds per tortilla until they are warm and pliable.

Assemble the Tacos: Spoon the seasoned plant-based ground "beef" and onion mixture onto each warm corn tortilla. Top the tacos with shredded lettuce, sliced red onions, salsa, guacamole, and vegan cheese.
