"Seafood" Stuffed Bell Peppers

Ingredients:

  • 2-3 vegan crab cakes (not fried). Recipe here
  • 2 medium sized bell peppers
  • 1/2 celery stalk, diced
  • 1/4 cup of vegetable broth
  • 2 tsps of Olive oil - to rub on the outside of the bell peppers
  • 1 1/2 tbsps of bread crumbs
  • Optional: 2 tbsps of liquid plant based egg (I used JUST egg)

Instructions:

  1. Prepare vegan crab cakes using my recipe here .
  2. Refrigerate the crab cake mixture overnight
  3. The next day, remove crab cakes from the refrigerator and remove the seaweed wrap. Add in diced celery
  4. Preheat oven to 375 degrees
  5. Cut bell peppers in half, remove seeds and rub the outside of each pepper with olive oil
  6. Fill the peppers with the crab cake mix, vegan egg and sprinkle bread crumbs on top,
  7. Place into an oven safe baking dish
  8. Add vegetable broth to the bottom of the baking dish
  9. Cover with foil and bake for 15 minutes
  10. Remove foil and bake for an additional 15 minutes or until peppers are tender
