Vegan Chicken and Orzo Soup

 

It's soup season bayyybeeee and this one here is so delicious! I meal prepped this for dinner recently and froze some for later. It’s easy to whip up with easy to find ingredients. I hope you enjoy this soup as much as I did!

Here’s everything you will need to make this cozy Vegan Chicken and Orzo Soup along with cooking notes:

Base Soup Ingredients:

Yellow Onions

Celery

Carrots

Green Onions

Shallots

Garlic

Fresh Parsley

Fresh Spinach or Kale

Salt

Black Pepper

Dried Orzo

Smoked Paprika

Red Pepper Flakes

Garlic Powder

Celery Salt

Italian Herb Blend

Vegetable Broth

Optional Toppings:

Vegan Parmesan - I recommend the brands Vio Life or Follow Your Heart

Green Onions

Vegan Chicken - I used vegan chicken from the Daring Brand

seasonings: Salt, Black Pepper, Smoked, Paprika, Italian Herb Blend, Lemon Juice

As with all of my recipes, if there is an ingredient on this list that you don’t have/can’t find or you’re not a fan of, feel free to leave it out!

STEP 1: Prep the veggies

STEP 2: Cook, season, and chop the vegan chicken

STEP 3: Sautee the veggies

STEP 4: Add the seasoning, dried orzo, and veggie broth.

STEP 5: Cover and simmer for 20 mins. Stir often

STEP 6: Add the leafy greens and give it a taste test. Adjust as needed

STEP 7: Serve and enjoy

This recipe makes 5-6 servings and can be frozen for later if needed.

Ingredients:

Ingredients:

  • 1-2 tablespoons of oil or vegetable broth for cooking
  • ½ yellow onion, diced
  • 2 celery stalks, sliced
  • 3 medium carrots, sliced
  • 2 shallots, sliced
  • 3-4 garlic cloves, minced
  • ½ cup fresh parsley, roughly chopped
  • 2 cups fresh spinach or kale
  • Salt and black pepper to taste
  • ½ cup dried orzo
  • 1 teaspoon smoked paprika
  • A couple of pinches of red pepper flakes
  • 1 tablespoon garlic powder
  • 2 tablespoons Italian herb blend
  • 4 cups vegetable broth

For the Vegan Chicken Ingredients:

  • Vegan Chicken (e.g., Daring Brand)
  • 1-2 tablespoons of oil or vegetable broth for cooking
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika
  • 2 teaspoons Italian herb blend
  • Juice from half a lemon

Toppings:

  • Vegan Parmesan (e.g., Vio Life brand)
  • Green Onions

Instructions:

Prepare the Veggies: Dice the yellow onion. Slice celery, carrots, green onions, and shallots. Mince the garlic cloves. Roughly chop the fresh parsley.

Cook the Vegan Chicken: In the same pot, cook the vegan chicken according to the package directions. Use oil or vegetable broth for cooking.

Season with salt, black pepper, smoked paprika, Italian herb blend, and lemon juice. Cook until slightly crispy and set aside for topping the soup.

Sauté Veggies and Orzo: In the same pot, sauté the prepped veggies until tender and fragrant (about 5 minutes). Add in the dried orzo and season with smoked paprika, red pepper flakes, garlic powder, Italian herb blend, and salt and pepper to taste.

Pour in the vegetable broth and stir well. Cover and simmer for 20 minutes, stirring frequently to prevent orzo from sticking.

Add Greens and Adjust As Needed: After 20 minutes, stir in the spinach or kale and the fresh parsley to the pot until the leafy greens have wilted down.

Stir and taste the soup, making any necessary seasoning adjustments..

Serve and enjoy: Add the soup to bowls and top each bowl with the chopped vegan chicken, vegan Parmesan, and green onions.
