Mediterranean Veggie Sandwich

A longggg longgg time ago, when I could visit Panera Bread and order their Mediterranean Veggie Sandwich it was the only sandwich I would order. Ordering this sandwich from Panera was a Friday tradition for me. That how obsessed I was with it lol

Now that I follow a vegan diet, I don’t eat some of the ingredients that come with the Panera Bread sandwich, so I did what I do best, made my own copy cat version of my all time favorite sandwich.

Some of the key ingredients you’ll need for this are:

  • Sourdough bread (Panera uses tomato basil bread)

  • Hummus

  • Leafy greens like arugula, lettuce, spinach, emerald greens

  • Pimento Peppers (or pappadew peppers)

  • Cucumbers

  • Red onions

  • Vegan feta cheese

  • Sliced tomatoes

  • Agave (if using pimento peppers)

  • Salt and pepper

  • Olive oil (optional)

Test this recipe out using heirloom tomatoes for two reasons, 1. they’re so beautiful, 2. they taste amazing!

I went with a roasted red pepper hummus and a jalapeno cilantro hummus. Both were amazing!

Mediterranean Veggie Sandwich ingredients:

  • 2 Slices of sourdough bread (Panera uses tomato basil bread)
  • 3-4 tbsp of hummus (I used roasted red pepper)
  • 1 handful of leafy greens like arugula, lettuce, spinach, emerald greens
  • 1 heirloom tomatoes, sliced (or use whatever tomato you can find)
  • 2 mini cucumbers, sliced
  • 2 tbsps of pimento peppers (or peppadew peppers)
  • Thinly sliced red onions
  • 2 tbsps of vegan feta cheese
  • 1 tsp of agave or your preferred sweetener (if using pimento peppers)
  • 1 pinch of salt and pepper

Instructions:

  1. Prep the veggies by slices the cucumbers, red onions, and tomatoes
  2. Assemble the sandwich by adding hummus to both pieces of sourdough bread. To one slice of bread, add the leafy greens, tomatoes, cucumbers, peppers, agave, onions, vegan feta cheese, and a pinch of salt and pepper
  3. Place the other slice of sourdough bread on top and enjoy!
  4. Lastly, pat yourself on the back because YOU DIDDDD THATTTT!
