Fried Oyster Mushrooms

Ingredients:

  • 1 packet of oyster mushrooms
  • Grape seed oil for frying (or whhichever oil you prefer)

Bowl one - dry batter

  • 1 1/2 cups of all-purpose white flour
  • 1 tbsp of salt
  • 2 tsps of black pepper
  • 2 tbsps of onion powder
  • 2 tbsps of garlic powder

Bowl two - wet batter

  • 1 1/4 cups of plant milk (I used original unsweetened almond milk)
  • 2 tsp of yellow mustard
  • 2 tbsp of liquid coconut aminos
  • 3 tsp of hot sauce
  • 3 tbsp of the dry batter

Instructions:

  1. Using a paper towel, brush the dirt off of the oyster mushrooms or rinse them with water and let them sit out to dry on a paper towel for 30 minutes
  2. Combine all of the dry batter ingredients and set aside
  3. Combine all of the wet batter ingredients and set aside
  4. Add the frying oil to a cast iron skillet or a large fyer pot. Adjust the heat to medium (If it is too hot, it will burn the mushrooms. If it is too cool, the mushrooms will soak up the oil)
  5. Add a quarter or half of the mushrooms to the wet batter. Squeeze the excess batter out and then add the mushrooms to the dry batter. Repeat one more time (I would recommend using one hand for the dry batter and one hand for the wet batter)
  6. Shake the excess dry batter off of the coated mushrooms and set aside
  7. Once the oil is hot, add the mushrooms and fry on each side until firm and crispy, about 3-4 minutes in total
  8. Repeat this until all mushrooms have been fried
  9. Place on a cooling rack until ready to be served
