Copycat CAVA tahini caesar dressing

 

Here’s everything you will need to make this delicious tahini caesar dressing:

  • Organic Tahini - Most grocery stores sell this, but if you need to order it online, here’s one to try

  • Dairy-free plain and unsweetened coconut yogurt—I like the taste of coconut yogurt, and it has probiotic benefits. My go-to brands are Cocojune Junie and Culina; however, any dairy-free plain and unsweetened yogurt will work.

  • Nutritional yeast or dairy-free parmesan

  • Dijon mustard

  • Vegan Worcestershire sauce - I typically find this sauce at Kroger or order it here. If you don’t have this sauce on hand, try making it with balsamic vinegar and coconut aminos like I did

  • Salt

  • Black pepper

  • Capers

  • Garlic clove

  • Lemon

  • Warm water - to help thin out the dressing

Tahini is high in magnesium, potassium, and iron while having anti-inflammatory benefits. My tahini Caesar dressing differs from CAVA’s because I added a probiotic-rich ingredient - coconut yogurt - to help with the creaminess of this dressing.

This makes 2 cups of the dressing and lasts in the fridge for a week

Ingredients:

  • 1/2 cup tahini paste
  • 1/3 cup dairy-free plain and unsweetened coconut yogurt
  • 1/3 cup nutritional yeast or dairy-free parmesan
  • 2 tsp Vegan Worcestershire Sauce (or 1 1/2 tsp balsamic vinegar with 1 tsp coconut aminos)
  • 1/2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tbsp capers, minced
  • 1 large garlic clove, minced
  • juice from 1/2 a lemon
  • 1/2 cup warm water (to thin it out)

Instructions:

  1. Finely chop the garlic clove and capers until they almost resemble a paste
  2. In a medium-sized mixing bowl, whisk together the tahini paste, coconut yogurt, nutritional yeast (or dairy-free parmesan), Dijon mustard, balsamic vinegar, coconut aminos, salt, and black pepper until well combined.
  3. Add the minced capers, garlic, and lemon juice to the bowl and mix them into the dressing.
  4. Gradually add warm water to the dressing, a little at a time, and continue whisking until you reach your desired consistency. You may not need the full 1/2 cup or want more, so add water gradually and stop when you achieve the thickness you prefer.
  5. Taste the dressing and adjust the seasoning if necessary. You can add more salt, pepper, or lemon juice according to your taste
  6. If you have a blender, you can blend the dressing for a smoother consistency. If not, continue whisking until the dressing is well combined and smooth.
  7. Once satisfied with the taste and texture, store the dressing in an airtight container in the refrigerator. The flavors will meld together as it chills.
